 RECIPE FOR PREPARING UGALI--Kenyan Foods
INGREDIENTS (4 servings)
4 cups of water
4 cups maize flour
1 tbsp. blueband margarine (optional)
1/2 tsp. salt (optional)
PREPARATION METHOD
Bring the water to boil in a medium sized cooking pot. 
Add the margarine and the salt (gives the ugali some taste, its optional though), stir and then slowly add the maize meal flour and stir with a wooden spoon until the mixture is thick and smooth. 
Make sure it is not too stiff nor too soft. 
Gather the mixture in the middle of the pan and turn the heat to low. 
Cover the pan and leave it on low heat for 15-20 minutes, turning occasionally. 
Flip the ugali  from the cooking pot onto a plate and form it into a "cake". 
Served best with chicken, fish or meat stew and a cooked vegetable dish or even sour milk.
